White Stem Pak Choi

White Stem Pak Choi

White Stem Pak Choi, or bok choy, is a cruciferous heirloom part of the cabbage family with thick white stalks and smooth green leaves. The entire vegetable is edible and can be eaten raw, cooked, and harvested throughout the season as a cut and come again.

Pak Choi contains antioxidants and other compounds that can help promote health. It contains vitamins C and E, beta-carotene, folate, and selenium, which can help reduce the risk of developing cancer. It's also a good source of fiber, calcium, vitamin B6, and vitamins A, C, and K.

Plant with vining beans, peas, or cucumbers, which protect them from the summer heat.  Strawberries and roots like onions, radishes, carrots, and beets are friendly companions to leafy greens. Mix lots of flowers and herbs in the bed to ward off insects and attract beneficial ones. Most herbs work well with and compliment leafy greens.

Starter will be in a 4" reusable nursery pot.
