Caudatus Red Amaranth

Caudatus Red Amaranth

Amaranthus Caudatus is an ancient heirloom originating in Central and South America. The Inca, Maya, and Aztec civilizations used it as a staple grain and considered it a beneficial healing food. Amaranthus Caudatus is also known as Love-Lies-Bleeding because of its cascading red flowers that droop to the ground during the summer.

It can grow up to 36 inches tall with red blooms cascading down that can also be around 36 inches. The stalks, leaves, stems, flowers, and seeds are all edible and highly nutritious. The seeds are a grain substitute, similar to quinoa. Use as a cold or hot cereal, grind into flour, add to baked goods or in stir fry.

From the National Library of Medicine "...validated the use of A. caudatus for the treatment of various ailments such as diabetes mellitus, cancer, malaria, hypercholesterolemia, atherosclerosis, helminthic and bacterial infections, inflammation, hepatic diseases and cardiovascular complications."

Starter will be in a 4" reusable nursery pot.
